I have installed BitBucket server 7.2 using the official installer. Everything is smooth and we are able to use BitBucket.
However I failed to find %JAVA_Home%. (I guess JRE was installed with the installer?) Also according to your KB (https://confluence.atlassian.com/bitbucketserver/running-the-bitbucket-server-installer-776640183.html) I should see Java tab in the services? But I cannot find Java tab. In the windows services.msc, I can see the BitBucket service is calling below path:
C:\Atlassian\Bitbucket\7.1.1\bin\bserv64.exe //RS//AtlassianBitbucket
Is it something missed in my installation or your KB is out-dated?
