Is there a way to automatically add watcher to a tickets with "Fix version" or that are in "Releases"?
Like a pre-defined set of users or something like that.

Yes there is a way, in automation you have an action called "Manage Watchers" that you can use to set a pre-defined set of users to a ticket. Also you can add conditions and trigger that better fit your need.
