If you go to the project's Details page, you can change the project type there. There are some implications to doing that and some of them are documented here.

I have done it successfully a few times, mostly changing a JSW project to JSM. There is some weirdness you need to fix such as workflows, making SLAs (if you're going toward JSW) etc. However a JWM or Jira Core to JSW type one won't be... bad.
