I'd like to get a report, list or view of every Assignee under each Filter in my Project. I would prefer it to appear on the Sprint board, so folks can see it during stand-ups.

On your sprint board, you can create swimlanes by assignees. This will separate issues in your sprint board by assignees. Go to the board>click board>board configuration>swimlanes>choose from the dropdown box.
Another option is to create a JQL filter on the sprint board. Click here for more information on creating quick filters.
