what is the maximum limit to add the values to single drop down field
Technically, a big number. Before you reach it, your field will have become useless to the user, and the browser will struggle to render it.
can we add 5000+ records???
Yes, but your users will not find this particularly usable and are quite likely to put rubbish in.
