Need to find issues that changed status 7 working days ago

and

status changed to 'Estimating' before startOfDay(-7)

 and

originalEstimate is empty

 

Will the results for this include only working days or even weekend days?

I need a query which has changed state 7 working days back

What you have will provide 7 days not just 7 working days.  You can get the results you want by using a week, -1w, instead of -7.
