Listing issues in Jira with thier associated sprint data

Is it possible to create a list of issues and have as part of the fields for each issue also the sprint and epic that this issue was assigned to?

Definitely possible to some extent. You can create a sprint and add the Sprint column to the issue navigator.

Add Epic Link and Sprint columns to Issue Navigator

(Sprint will be a number, you need to map it actual name by looking at the board)
