Not sure if you are referring to a workflow status, if not, please give us a clarification.
Inside the edit mode over your Workflow settings, you can just select the status and click on Remove Status.
Case if it's an active workflow, you won't be able to perform any changes, so you can copy and make the changes over this new workflow copy and assign to you projects again
