I would like to be able to set the security level as an administrator during a post function.
Is it possible to run the post function as another user?

Any plan to bring the security level back to what it was after the transition ?
No...no plans to bring it back to what it was.
What action do you want to do in the post function?
You can use Workflow PowerBox add-on and "transition this issue" post function. It can run another transition as different user.
There is also "Set or update security level" post function that allows you to set security level (even if user don't have permissions).
