1. How do I create an issue (I've got working mail handler setup) with a specific label value?
2. How do I setup a default value for Labels field?
1. You don't. The built in mail handlers don't have any functions to import field data. I'd look at the JEMH of course, I'm sure that can do it
2. You don't. Label fields don't have this function (and in useability terms, you wouldn't do it, because your users will learn to ignore the field and not set anything of any use)
