We installed the polish language pack on an enterprise Confluence installation and we found that many fields in the create dialog are still in English:

As Timothy mentioned you are welcome to add/fix translations to Polish language pack on your own.
Atlassian does not support Polish out of the box and it is evolved by community. You can read more about how to start at https://confluence.atlassian.com/display/TRANS/Atlassian+Translations
