I can not set up the field ASSIGNEE to be optional, I am in the field configuration and I do not have the option to make it optional, it is automatically REQUIRED. I need it to be optional. I need to create a tasks, which are UNASSIGNED. Thanks.

There's an additional flag for Assignee.

Log in as an admin and go to Admin -> General settings

Look for the "allow unassigned issues" option and enable it.  You will now find assignee offers you "unassigned" as an option (and usually the default).
