You may use startOWeek/endOfWeek functions to target weekends but directly excluding/including weekends for a date range is not supported OOTB.

Here are some alternatives that you may consider:

Use a third-party app available in the marketplace which extends JQL functionalities
Export your past 1 year data and then use spreadsheets or Excel to filter out issues on weekends
NOT recommended, write a JQL query for all 52 weekends of the past year (this will include 2 (1 query for start of weekend and 1 query for end of the weekend) *52 = 104 queries) using startOWeek/endOfWeek functions which is very manual and error prone
Use Automation + customfield to mark issues which are created on weekends, this can be a permanent solution if you need this report in future
