Can one configure/specify which fields are cloned when cloning a JIRA story?IMHO, cloning the Sprint field does more harm than good – it'd be very helpful if we could omit that field.
There is a plugin from Bob Swift called Clone+ which allows you to configure different cloning options. Or alternatively you could use a scripting plugin to clear the sprint field upon creation.
However, you may not have seen this https://jira.atlassian.com/browse/JSW-6541 from Atlassian that cloning will no longer copy the Sprint field. This is already (Feb 2016) rolled out to cloud and will appear in a server version soon.
