how do i setup JIRA 7 to use tomcat?

This question is in reference to Atlassian Documentation: Installing JIRA applications from an archive file on Windows, Linux or Solaris

I am trying to configure JIRA 7 to use a company blessed version of Tomcat. How do I do this?
