Can I confirm...

For the Queries > My Queries menu, is this one of your JSM Queues in Agent view?
Is Query Creation Date just the created date of the ticket?

If this is the case - you can do this as a Project Admin...

Go to the relevant Queue in your Agent view
In the top-right corner, select Options > Edit Queue
Add the relevant field - Created - into the Columns section.
Once added, click/hold to drag Created into the right location in the column order
Press Save

If this isn't what you mean - let us know some more specifics so we can investigate further

Edit: Noticed this is Server - I provided instructions for Cloud. Instructions should be relatively similar though according to this help page.
