I am looking for a new documentation and DMS product for my organization. Needed a demo scheduled asap. Does Confluence teams schedule such support?

I'm not quite sure of a demo by Atlassian- tech support. However, you can quickly go through Confluence free training or access this curated youtube playlist that has 146 videos to access.
