Is it possible to sort on release date in JIRA in Project > Releases page?

Yes, you can sort by release date. Just click on the column name "Release Date"

Oh, i see, your tag was about jira cloud. So unfortunately this feature exist only on Cloud. Here an open issue, you can vote for it
