my final goal is to include a post function in the workflow transactions so that when it goes to the "In Progress" status, fill that date field with the current date.

You can use the 'Update any Issue Field Post-Function (JSU)' post function with %%CURRENT_DATETIME%% .

@Swaroop  You would need to us an app like ScriptRunner or JSU to accomplish this.  I am positive it can be done using ScriptRunner and think it can be done using JSU.  There might be other apps as well that could do this.
