How do I assign certain users to certain projects?

I am using the Atlassian-hosted version of Jira. I am the administrator. I see how to invite users in the User Management area. However, it appears that all users can then access all projects. I will have multiple projects with different users who need to access each one (and more importantly, users who should not be able to access certain projects). How do I set up the specific users for specific projects?

I do see when I enter a project, and go into Administration and then Roles, that there is a field for adding users to each role. I thought this would be the way to accomplish what I need. However, even with NO users added to the User role for that particular project, my users are still able to access that project when they login.

You should take a look at the permission scheme of the project. For example, if the "browse project" permission has been granted to the "jira-user" group everone in that group can see the issues of that project. You should assign that permission to the role "users".
