I have a custom field to select the Product manager of a product.
Is it possible to only show users/people that are in a specific group?

If you have a relatively recent version of jira, you should use this version: https://studio.plugins.atlassian.com/wiki/download/attachments/2261359/issue-alternative-assignee-1.6.3.jar
Oh sorry, that shows only members of a role. Other plugins are available - eg https://plugins.atlassian.com/plugin/details/373950 and Minyaa.
