How can I show a count of tickets selected in a filter?

There are no grouping functions in JQL.

You can either see the count result

in the output screen of the filter (top or bottom of page)
on a dashboard gadget
through the rest-service call (attribute "total")
count your resultset (such as table-macro in confluence)
use an add-on.
