I am a site admin and would like to change the email address of jira and confluence account of a user. His consultancy email address was connected but now the company has changed. How do I change his email adress.

For Server, please follow the below steps:
JiraLogin as Jira admin/site admin, navigate to Cogwheel-> User management--> Users and select the user where you u can see the Actions option under which you can edit details(Email).Confluence:Login as Confluence admin , navigate to Cogwheel-> User management--> Users -->edit details .
For cloud :
An admin can impersonate a user in Jira, they can't change user details because they're not the owner of the account.
