The issue overview shows in a "Detail" section some common standard fields. Am I able to place some fields of my own, custom fields, in here? For instance a custom an project specific status field. If so, how?

Not sure which version of JIRA you are using but you can do this by modifying the appropriate velocity file. I was able to remove and add fields.
