Does the sub-task follow the parent workflow or can you assign a different workflow for a subtask?
You can assign different Workflows (for any issuetype).
You can assign a different workflow.
I would recommend you indeed do this if later on you would like to apply some rules (post functions, conditions) or add transition screens that apply to your parent workflow, but not the sub-tasks.
Usually, for most business-processes, this is a shorter & less complex workflow.
