So we have created a nex-gen board but realised after adding epics that its not quite our way of work, can i change it to kanban with existing items on there because for some reason im not able to add additional boards onto this project?
No it is not possible.
Next gen is experimental and what we are allowed to change is still very limited.

You need to create a new project, then move the issues from the Next-gen project over to your new Kanban project.

sorry for the late response. you cant change it but you can create a kanban board and then drag the items to that board.
