Does Jira keep record of converted issues

From bug to story / vice-versa ? If so, can you run a report to export that data ?

You can check the history of the ticket. But to get a report of those items I'm not entirely sure. You can look into some add-ons that might be able to extend the functionality of reporting on the History of a ticket.
