Is it possible to change the fields available in a story by adding a label and/or some other option?

Basically, here's an example of what I'm trying to achieve - lets say I'm regularly adding stories that involve creating a table in a database - I'd like to add the label "new_table", and this to then add the required field of "Columns", which has to be filled out before the story can be saved.

Unfortunately, it's not possible to achieve the exact scenario you are looking for, however, you can add a single issue-type for each kind of request.

Create a single issue type for each kind of request would allow you to configure different screens for each kind.
