S there any option available tto make our pipeline deploy as custom selection process and to approve a particular variables to deploy

We are currently working on this feature which is being tracked here https://bitbucket.org/site/master/issues/13737/parameterized-builds.
Feel free to upvote/watch and add your use case there - in particular you mentioned the concept of "approving" variables.
