I'm trying to find the "advanced" button for the email integration, but can't find it in the top right corner which is where this page https://support.atlassian.com/opsgenie/docs/use-advanced-integration-settings/ implies it should be.
I'm currently on the essentials plan. Is this a feature of a higher plan?
Yes, you need Standard or Enterprise.

The advanced tab would be related to these sections of the pricing page:
The advanced tab allows you to customize which requests create alerts, while also the flexibility to customize how the alerts are formatted / sent to your users.
