Hi Tunity - Welcome to the Atlassian Community!

You can't remove the Done tasks on a JWM board right now. Hopefully, that feature is coming soon. You can see what that looks like by going to the List and checking out the Quick filters there.

Welcome to the community, unfortunately You can't add quick fitters or update the Jira work management board filters.
