Hi all! Is there a way to create sub-tasks (or, if you prefere, "sub-ideas" in jira product discovery?

In the standard version of JPD, there isn't. The structure is flat as you only have 1 type: an idea (that can be enriched with insights).
While it is not entirely clear what you are hoping to achieve from your question, it might be good to know that JPD Premium has just been released into general availability. That version of the plan comes with hierarchies, that may be in line with what you are looking for. You can read more about the topic in this community article.

@Pierfrancesco Di Ruzza You can create custom idea types, however you require an upgrade to our Premium edition (as @Walter Buggenhout mentioned) to create relationships between ideas and sub-ideas.
