I have downloaded the Trello app for Windows and have gone into the screen to change my Email and Privacy preferences but cannot figure out how to get back to view my Workspace(s) and Board(s)!

No worries, we can resolve this problem together! Have you tried quitting the app completely? When you reopen the app, you should see the header of the app with links to your Workspaces, recent and starred boards.
