This seems very strange that an actual time is required for the "Due Date" field on a card.
Is there a way to not specify a time on the due date? This should be an optional field.

That isn't possible right now, unfortunately. I'm guessing that the due time is there for reminder/notification purposes. You could set your due time to 11:59PM so that the card stays in the "upcoming" yellow color, then will turn red if you've passed your due date at midnight the next morning.
