Use-case: Hide all resolved tickets that are a week or older.
I can't seem to find this setting or an area to filter tickets via JQL on the next-gen boards.
This is not possible at the moment from what I understand. But the example use-case you mentioned is implemented by default. Tickets that are in status "Done" for more than 2 weeks are automatically hidden (with an option to display them again).
That's great to hear. Does the option to display the tickets again show up once there are tickets that are automatically hidden? I don't have any hidden tickets and I don't see that option.

Exactly. It will look like this:
