We created a program and imported boards from different projects. The planned start and end dates on issues were automatically updated with this import but I was wondering if there is a way to revert back to what people had before whether they had dates in their themselves or if it was blank. Will deleting this program altogether solve for this?

Unfortunately, there is no undo in Jira and in BigPicture but there is a great tool that can do just that called Time Machine.
During the synchronization of the Program, all issues added to the scope will be updated as the app requires the start and end dates to generate the task on the timeline. I recommend reading the Before you start section in the documentation.
Deleting a Program will not revert the dates and unless you have a database backup (which would cause additional problems as you would revert all changes in your Jira instance), I'm afraid you will need to use the issue history and manually revert the dates.
The synchronization of the date fields can be disabled in the Jira Administration > Manage Apps > Technical configuration > General > Tasks, but keep in mind that once enabled
