Is there a way of automatically synching tasks with an external timesheet system?

I'm looking to record time against tasks in an external system (as multiple people work on 1 task).  I'm pretty sure JIRA does not support this?

So would be looking for some kind of automation whereby tasks can be exported and set-up in an external timesheet system, and then we can log time and understand better how time is spent.

You can use WorklogPRO add-on. It can export worklogs with lots of information including issue details, custom fields, worklog attributes to excel or you can use Rest API to get the same information in JSON format.
