How do I create smaller projects within a project in Jira Work Management, similar to Epics in Jira?

We have a project in Jira Work Management for our Ways of Working at our company. 

One big task for us within that project is to define new guiding principles for how to work. This task includes a lot of tasks, which you could argue are subtasks, however they themselves also have subtasks. Example:

Project: Ways of Working

Smaller project within the project: Define guiding principles

Task: Define process for defining guiding principles

Subtasks:

- Facilitate ideation workshop to codesign process

- Document the process

- Get sign-off on process

 

What I would like to do:

1. I want a project within the project (eg. an Epic) called "Defining guiding principles"

2. I want to be able to visualise that "smaller project" in a roadmap within the Ways of working project, together with other smaller projects we have. 

3. I want to have tasks within each "smaller project"

4. I want to be able to have subtasks to those tasks.

You should be able to do most (if not all) of that now. Have you tried it? Are you running into obstacles?
