I'm getting this error installing Confluence with MySQL:
Your database must use 'READ-COMMITTED' as the default isolation level.
Can I resolve it without changing the global MySQL isolation level?

I am afraid not. The Database Setup For MySQL for Confluence clearly states that if using the MySQL database with Confluence the isolation level has to be READ-COMMITTED.
I would not recommend ignoring this error. It might be possible to get Confluence to start up with this condition, but it's very likely that Confluence will not operate as designed. It's much better to fix this during the initial setup than to have to fix this after data has been added to the database.

I'd strongly agree with Andrew on this - I've been asked in the past to try to repair a Confluence database that had been run for a while without read-committed. It was severely corrupted in some places, and the client lost data.
