How can a command use a different JVM than the the server?

What is the canonical way to run a command using a different JVM than the one the server is running under?

In Ant/Maven tasks you can choose which installed JVM you want to use with. Otherwise its just a matter of setting JAVA_HOME and PATH accordingly.

So, what you are saying is to set JAVA_HOME in Bamboo when configuring a task's environment variables? Or via Ant/Maven? Will I have to add both JDKs under Administration->JDKs?
