If you want to consistently replace that string in all places of Jira user interface you will have to create a modified translation of a Jira. I just had a short look where the term prio occurs using this url: https://translations.atlassian.com/dashboard/translate?lang=de_DE#/11/0/0/ALL/ALL/Prio As you can see there's quite a lot to do but thanks to this page it can be done :)

I did exactly the same as Dieter and it worked like a charm. Just make sure not to use auto replace as the keys contain the word priority as well ;)

You have to manually edit the translations files found in: /atlassian-jira/WEB-INF/lib/jira-lang*.jar
