When I go to create a checklist and it says 'copy items from...', when I click on that I'm only given a few of my checklists. The checklist that I want to copy isn't listed. Why does it only give you some of them?

That list should show all checklists on open cards on that board. If a checklist isn't showing up, it could be that the card that checklist is on is either archived or is on a different board.
If that's the case, you can either un-archive the card or copy it to your other board so that you can access its checklist.
