When our field members add an insight and attached a Salesforce account, how can I sum up all the ARR from the insights up to the idea? Does that ARR stay up to date? If not, how do we refresh it regularly?

You can use a Custom formula β Roll-up to sum numeric ARR values from Salesforce-linked insights.
The tricky part is synchronization. Atlassian doesn't document an automatic refresh interval, so test whether Salesforce changes update your insights.
Also watch out for duplicate accounts to avoid counting ARR twice. π
