Jira Software - Issue - when adding clients to a specific team they can see ALL our projects, they must only be able to see their projects that we have set-up for that specific team.

We are on the Free version.

I know that by upgrading to the Standard version we'll be able to edit the roles. Would this resolve our issue?

Yes. Standard would be the way to go here.

Yes by subscribing to any paid version other than free will allow to create groups and roles to restrict the users to their project only.

You can also do much more with paid version.

As of my last knowledge update in September 2021, Jira Software Free version had certain limitations, and one of them was limited permission control.
