We are currently running Bamboo Data Center version 8.0.10. Could anyone tell me what would be the next closest release that is bundled with an Apache Tomcat version that is greater than 8.5.84 ?

The next minor release of Bamboo 8.0.12 will embed Tomcat 8.5.84. That is the current information from today 14/01/2023, it may change until the release is finished. There is still no ETA for the release date.

You can also use Tomcat 9 by switching to Bamboo 9.0 and 9.1.

Bamboo team is going to release 8.2.7 in a few days which will use Tomcat 8.5.84

I have checked the release notes for 8.2.7. It looks like the Tomcat Version is updated to 8.5.83. Is that correct?
Tomcat is updated to 8.5.84 in Bamboo 8.2.7
