Is there any power-up that registers the changed dates in the checklist?

Unfortunately there is no trigger based on Checklist item due dates. Item changes is registered by Trello so if you have a webhook you would be able to handle change. For that matter any automation for due date or assignment beyond the 4 or so action has to be handled with code via http request / webhook etc.
