how can I use excel to download release information

We are trying to use JIRA to for the FIX Version tool and by using it, we want to be able to dump this information into a spreadsheet while progressing through a given sprint period to ensure we only have to contact a person or team for multiple pieces of completed work.

I am unclear what you are trying to do. Would you please explain:

what the "FIX Version tool" is, and how/where you see that in Jira?
what information are you trying to export to a spreadsheet?

fixVersion in out-of-the-box Jira is a field, and it can contain one or more Release values.
