On the checklist options, there is a portion where it allowed a check list. On this check list, how can I set it up where I can see who checked the box? I can assign it to people, but I want to see who completes it.

the action is updateCheckItemStateOnCard
and if you fetch either actions or use a webhook you would know.
@Kelli Lee on each card is an "activity feed". You can show/hide details. If you choose to show details then you'll see all actions including checklist item completion.
