Nic, it seems like you literally described doing what Mike is attempting to avoid. Is there a way to ensure edit access is granted to a page for one individual user, without assigning any access at all/configuring restrictions for all other pages under the same space????
There is no way currently with the way accesses are dealt in confluence (top-down) to gave access to people outside the space to a single page inside the space without going into admin hell. It has been requested too many times to allow individual accesses to single pages to confluence without success even though customers are screaming for it.
The alternative solution is create extra spaces that contain only the pages you want to gave edit access and create something less ideal, so you have full control of individual space access, and then use macro "insert page" into original space to maintain sync/view, if needed. it requires to isolate information that is required for specific audiences and create spaces to hold the pages
