Basically, you cannot recover a deleted checklist in a card. You have to manually re-enter the values of that checklist.
@Caroline you can't recover a deleted checklist, but you can see in the card's activity feed which checklists were added, and which items were completed. This allows you to partially rebuild a checklist based on that history.
